1 pound boneless skinless chicken thighs
1 tablespoon oil
1 onion sliced
1 teaspoon minced ginger
4 garlic cloves pressed or minced
1 tablespoon chili garlic sauce
2 tablespoons oyster sauce
1 tablespoon fish sauce
1/2 cup low-sodium soy sauce
1/4 cup rice vinegar
4 ounces shiitake mushrooms stems removed and sliced
1/2 - 3/4 pounds baby bok choy sliced into quarters lengthwise
5 cups Water
1 1/2 tablespoons Knorr Granulated Chicken Bouillon

Directions:
Heat a large pot or Dutch oven over medium-high heat. Add the onion and sauté for about 5 minutes, until it begins to soften. Stir in the sliced mushrooms and cook for an additional 2-3 minutes.
